One of the most beloved traditions of the Boulder Burgundy Festival returns to the spectacular Flagstaff House Restaurant for an afternoon celebrating great Burgundy, exceptional cuisine, and the convivial spirit of the Paulée.
This year promises to be particularly special as we welcome Sabine Mollard of Domaine Marc Morey and Nicolas Rossignol to Boulder.
Together, our two guest producers provide a remarkable journey through the Côte de Beaune, from the great white wines of Chassagne-Montrachet to the celebrated Pinot Noir terroirs of Volnay and Pommard.
The afternoon will feature selections from Domaine Marc Morey and Nicolas Rossignol, complemented by an extraordinary collection of old and rare Burgundy wines selected especially for the occasion.

Our planned Rossignol selections offer an unusually broad look at Nicolas’ work, including multiple vintages of Pommard, Premier Cru Volnay, and even his explorations of Beaujolais.

These wines will join selections from Domaine Marc Morey, along with mature and rare bottles from Burgundy chosen for the celebration.
A team of leading sommeliers will guide guests through the wines, sharing insight into the vineyards, producers, vintages, and traditions behind the bottles, while the Flagstaff House culinary team creates an elegant multi-course menu designed specifically for the occasion.
Inspired by the traditional Burgundian Paulée, this lunch is ultimately about generosity and shared experience: remarkable bottles passed around the table, beautiful food, conversation, and the pleasure of experiencing Burgundy together.
With Sabine Mollard and Nicolas Rossignol joining us in person, this year’s Paulée promises to be one of the most memorable celebrations in the history of the Boulder Burgundy Festival.
